Herb stuffed beef roll with sweetheart cabbage recipe details
Ingredients
20 g | thyme, chopped |
20 g | rosemary, chopped |
20 g | chervil, chopped |
20 g | sage, chopped |
500 g | beef fillet, cut to a large thin plate |
salt and pepper | |
2 tbsp | mustard |
2 tbsp | olive oil |
1 clove(s) | garlic, chopped |
25 g | lard |
kitchen string | |
400 g | sweetheart cabbage, thinly sliced |
2 | shallots, chopped |
200 g | single cream |
100 ml | chicken stock |
50 g | freshly grated horseradish |
Instructions
Season the beef fillet with salt and pepper and spread with mustard. Sprinkle with the mixed herbs. Roll up and tighten with kitchen string.In a saucepan, heat the oil. Sear the roll from all sides over high heat for 1-2 minutes. Preheat the oven to 125°C. Transfer the roll onto a lined baking tray and bake for 20-30 minutes.
In a pan heat the lard and sauté the shallots and the garlic until lucent. Add the cabbage and cook for a minute. Pour in the stock and and the cream and bring to a boil. Cook for 2-3 minutes. Season to taste with salt, horseradish and pepper.
Cut the roll into slices and serve with the cabbage.
