Ingredients
3 large | eggs |
¼ tsp | salt |
1 pinch(es) | white pepper |
1 tbsp | butter |
1 tsp | parsley, fresh, finely chopped |
1 tsp | chervil, fresh, finely chopped |
1 tsp | chives, fresh, finely chopped |
½ tsp | tarragon, fresh, finely chopped |
Instructions
In a bowl, using a fork or wire whisk, beat together the eggs, salt and white pepper until lightly frothy.In a 20 cm omelette pan over medium heat, melt the butter. Add the eggs and, as they begin to set, using a fork or spatula, lift the edges and gently push toward the centre, letting the liquid portion flow underneath.
Cook until completely set but still slightly moist on top, about 2 minutes. Evenly sprinkle all the herbs over the surface off the eggs. Shake the pan; if the omelette does not slip easily, carefully loosen the edges.
Slide gently from the pan to a serving plate and, when halfway out, flip the pan over to fold the omelette in half. Serve at once.
