Hennessey house granola recipe details
- Ingredients:
- 1/2 cup sunflower seeds, roasted and salted
- 5 cups oatmeal, regular (not quick oats)
- 1/3 cup canola oil
- 1/3 cup honey
- 1/4 cup brown sugar, firmly packed
- 1 teaspoon vanilla extract
- 1 pinch of cinnamon (more if desired)
- 1/2 cup toasted almonds
- 1/2 cup raisins
- 1/4 cup flaked coconut
Combine the oil, honey, brown sugar, and vanilla. It helps to heat this mixture in the microwave for about 30 seconds. Measure the oats and sunflower seeds into a large mixing bowl. Pour the honey mixture over the oats and sunflower seeds and stir until evenly coated to ensure proper baking. Spread on one or two large cookie sheets (with enough room to stir). Bake in a 350-degree oven for about 30 minutes, stirring about every 10 minutes. Watch closely during this time. Mixture should be evenly browned, but not scorched or burned. Remove from oven when desired degree of browning is attained. Let set to cool.
In the same mixing bowl, combine the cinnamon, toasted almonds, raisins, and coconut. When oat mixture is cool enough, add to the mixing bowl. You may be creative and add other things you like in granola, e.g., dried cranberries, apricots, dates, apples, bananas, etc.
This is great served/combined with your favorite fruit yogurt or milk. You may never go back to store-bought granola again!
