Ingredients
800 g | small potatoes, quartered |
salt and pepper | |
500 g | smoked pork loin, cut into 2cm cubes |
500 g | green beans, trimmed and halved |
1 | onion, chopped |
200 g | sour cream |
5 sprig(s) | thyme, chopped |
1 tbsp | apricot jam |
3 tbsp | oil |
250 ml | vegetable stock |
chilli powder |
Instructions
In a pan heat the oil and fry the potatoes for 3-4 minutes. Add the onions and cook for another minute. Add the thyme and the beans. Deglaze with the stock and bring to a boil. Cover and simmer for 15 minutes. Stir in the smoked pork and leave on the hob until the meat is hot. Season to taste with salt and pepper.Mix the cream and the jam. Season to taste with salt, pepper and chilli powder. Serve with the potato stew.
