Hearty onion soup recipe details
Ingredients
6 medium | onions, finely chopped |
4 tbsp | butter |
2 tbsp | flour |
1.2 l | vegetable broth |
½ tsp | dried thyme |
1 | bay leaf |
8 slice(s) | French baguette, sliced, toasted |
150 g | Parmesan cheese, grated |
salt and pepper, to taste |
Instructions
Melt butter over moderate heat in a large saucepan. Add the onions and sauté, uncovered, stirring, 10 to 15 minutes. Blend in flour and cook, stirring, 3 minutes longer.Add broth, thyme and bay leaf. Season with salt and pepper. Bring to a boil, stirring constantly, about 6 minutes.
Simmer, partly covered, for 30 minutes. Remove from heat and discard bay leaf.
Ladle soup into bowls and add grated cheese. Add bread slices in each soup bowl.
