Ingredients

4	egg yolks, fresh
3 tbsp	lemon juice
2 tsp	mustard
	salt and pepper
500 ml	rapeseed oil
4 clove(s)	garlic, minced
10 sprig(s)	thyme, finely chopped leaves

Instructions

All ingredients should have the same temperature.

In a high vessel combine the egg yolks with lemon juice and mustard. Season with salt and pepper. Whisk with a hand blender, adding the oil first drop by drop, then in a thin stream. Stir in the garlic and the thyme.

Goes well with potatoes in their jackets or with boiled eggs or fried fish or serve with your BBQ.
