Healthy balsamic apple stuffed chicken recipe details
Baked chicken marinated with balsamic vinegar and stuffed with apples, raisins, and crushed pecans.

Ingredients
Serves: 4- 4 skinless, boneless chicken breasts
- 2 cups balsamic vinegar
- 1/4 cup extra-virgin olive oil
- 3 cups peeled, cored, diced apples
- 1 cup crushed pecans
- 1/2 cup raisins
- 1/2 teaspoons ground black pepper
Preparation method
Prep: 20 mins | Cook: 35 mins | Extra time: 5 mins, resting1. While pressing firmly down on chicken breast with your hand, run a knife through center of breast parallel to cutting surface, leaving other side of breast attached in order to create pocket in the meat.
2. Place pocketed breasts in resealable plastic bag with balsamic vinegar and 2 tablespoons olive oil for at least 1/2 an hour and up to 4 hours before needed.
3. At the end of marinating period, preheat oven to 400 degrees F.
4. While oven is preheating: combine remaining oil, apples, pecans, raisins, and black pepper to large skillet. Cook on medium-high heat until apples begin to brown and pecans roast, about 10 minutes, stirring occasionally.
5. Remove stuffing from heat and place approximately 1/4 cup of mixture in middle of each breast. Fold breast over and secure with tooth picks.
6. Place breasts on edged baking sheet with remaining stuffing spooned over top of chicken. Insert oven-safe thermometer into stuffing of the largest breast.
7. Cook breasts for approximately 25 minutes, or until internal temperature of stuffing is 165 degrees F.
8. Remove from oven, tent with foil and let rest for 5 minutes.
