Ingredients

300 g flour, all purpose
100 g hazelnuts, ground
70 g sugar
½  vanilla bean
250 g sweet butter, very cold and cubed
150 g sugar or powered sugar

Instructions

Blend flour, hazelnuts, sugar and the scrapped out vanilla seeds (save the vanilla pod to make e.g. pudding) on a pastry board.

Add the cold butter on the dry ingredients, work together quickly into a smooth dough. Form dough into a long log with a diameter of about 3cm. Wrap in foil and refrigerate for 1/2 hour.

Preheat oven to 160° C.

Take dough out of foil, cut slices about 1cm thick and form quickly into little sausages. Place on a greased baking sheet and give the sausage a crescent shape. Bake on middle oven rack for 15-20 minutes or until lightly golden.

Roll warm cookies carefully in the sugar or powered sugar. Makes about 60 to 70 cookies.
