Hash brown potatoes recipe details
Ingredients
500 g | baking potatoes,peeled(optional)and shredded |
½ tsp | salt |
1 pinch(es) | freshly ground pepper |
2 tbsp | unsalted butter |
1 tbsp | olive oil |
Instructions
Place the shredded potatoes in a bowl, add water to cover and let stand for 5 minutes to remove excess starch.Drain the potatoes and dry thoroughly with a kitchen towel, squeezing out all excess water. Place the potatoes in a bowl, add the salt and pepper and mix well.
In a large non-stick frying pan over medium-high heat, melt the butter with the olive oil. Divide the potatoes mixture into 4 equal portions and place each portion in a free-form spoonful in the pan. Flatten each mound with a spatula, then cover and cook until browned on the bottom, 4-6 minutes. Turn the potatoes, flatten again and cook until browned and crisp on the second side, 4-6 minutes longer.
If you like, just before cooking the potatoes, season them with herbs, spices or other ingredients that complement what ever else you are serving. For instance use ground cumin and minced fresh chillies for a Mexican flavour, or chopped fresh basil and minced garlic for a Mediterranean touch.
Serve immediately.
