Hainanese chicken rice is a popular dish originating from Hainan, China. It is a flavorful and aromatic dish that combines tender steamed or poached chicken with fragrant rice cooked in chicken broth. The dish is typically served with a variety of condiments such as chili sauce, soy sauce, and ginger sauce, which add extra layers of flavor. Hainanese chicken rice is a beloved comfort food known for its simplicity yet rich taste, making it a favorite among food enthusiasts worldwide.

INGREDIENTS:

Serves 2

1/2 chicken (medium size)

(A) For chicken soup:

1 pot of water, enough to cover chicken

20 nos. red dates

2 slices of ginger (optional)

150g of chinese watercress leaves, xi yang cai (optional)

(B) For chicken rice:

1 cup of rice, rinsed

1 cm of ginger, peeled and sliced

5 gloves of garlic

2 tbsp of oil (or chicken oil obtained from fat)

1 tsp of chicken granules

1½ tsp salt

Chicken soup from (A) from boiling rice

METHOD:

  1. Bring pot of water in (A) to boil. Add chicken, red dates and ginger (if any) and continue to simmer over slow fire for 15-20 minutes until chicken is tender .

  2. Remove chicken from soup. Add watercress leaves (if any) and continue to boil for another 30 minutes.

  3. Heat oil in (B) in a pan. Fry ginger and garlic until fragrant. Add rice and continue to fry for a while.

  4. Dish fried rice to rice cooker. Add chicken granules, salt and chicken soup to rice. Boil rice as usual.

  1. Chop chicken into pieces. Garnish with cucumber and tomato slices if desire. Serve with rice and soup.

NOTES:

  1. I like to the combination of chicken rice with watercress leaves soup. The water used for cooking the chicken has some nutrients in it. Use it as the base of tonic soup is actually a good idea!

  2. Amount of water required depends on type of rice. However, please use double the quantity of water you normally use for boiling white rice. As rice is fried before boiling, the layer of oil actually prevents water from being absorbed as easily as normal.
