Haddock mousse recipe details
Ingredients
1 large | haddock fillet |
1 small | onion, sliced |
240 ml | milk |
1 | bay leaf |
2 tbsp | butter, unsalted |
½ tbsp | flour |
2 tbsp | water |
½ tbsp | powdered gelatine |
fresh juice and grated rind of 1 lemon | |
60 ml | double cream, whipped |
½ | cucumber, sliced |
salt and pepper, to taste |
Instructions
Combine the haddock, onion, milk and bay leaf in a saucepan. Bring to the boil, cover and simmer for 10 minutes.Strain the fish and reserve the cooking liquid. Remove all the skin and bones and flake the fish finely. Set aside.
Melt the butter, stir in the flour and cook for 2 minutes until the mixture is light brown. Add the milk mixture and cook for 3 minutes stirring. Season to taste with salt and pepper.
Remove from the heat, cover and leave to cool.
In another bowl mix the gelatine with the water and lemon juice in a sauce pan. Dissolve over very low heat or over a pan of hot water.
Combine the fish and gelatine into the sauce with the lemon rind and cream. Pour into a soufflé dish and leave to set.
To serve garnish with the cucumber.
