Ingredients
250 g | natural undyed smoked haddock |
170 g | mature Cheddar cheese, grated |
115 g | mushrooms, sliced |
30 g | flour |
30 g | butter, plus 1 – 2 ozs for cooking the haddock |
1 tsp | mustard flour, heaped |
300 ml | milk |
salt and pepper, to taste | |
½ | lemon, juice only |
Instructions
Cook the smoked haddock by your usual method (We microwave with the mushrooms for about 6-7 minutes on medium, dabbed with butter and a squeeze of lemon juice).In the meantime make the cheese sauceby making a beurre manie – melt the butter in a pan and stir in the flour. Cook for a minute or so, before starting to add the milk, a little at a time, stirring vigourously until a smooth paste is established at every addition. (Crucial or it will go lumpy!)
Continue until a smooth sauce, not too liquid is made. Add the cheese and mustard, stirring over the heat until the cheese is melted and a smooth sauce achieved.
Skin the cooked haddock and break into bite size pieces, removing any bones. Stir into the cheese sauce with the cooked mushrooms, with any cooking juices if you used the micro wave method.
Serve with boiled rice and green peas.
