Ingredients
Serves: 4- 2 tablespoons olive oil
- 2 small onions, finely chopped
- 1 pound ground pork
- 1 tablespoon sweet smoked paprika
- 10 ounces frozen corn kernels, thawed
- 2 tablespoons finely chopped cilantro
- Juice of 1 lime
- Salt and pepper
- 8 (6-inch) flour tortillas
- 8 ounces shredded Monterey Jack cheese
Preparation method
Prep: 10 mins | Cook: 15 mins1. Pour olive oil into a skillet and set over medium heat. Cook 1 chopped onion in the hot oil for about 5 minutes to soften, then stir in pork and smoked paprika. Cook, stirring, for about 10 minutes to brown thoroughly.
2. Stir corn together with 1 chopped onion, cilantro, lime juice, and salt and pepper to taste in a bowl.
