Ground lamb and olive sauce recipe details

Ingredients
Serves: 4- 1 red bell pepper
- 1 tablespoon olive oil
- 1 pound ground lamb
- 1/2 carrot, crated
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 2 sprigs rosemary, finely chopped
- Salt and pepper
- 1/4 teaspoon ground cloves
- 1 bay leaf
- 1 teaspoon orange zest
- 1/4 cup tomato paste
- 1 3/4 cups chicken broth
- 1/2 cup whole milk
- 1/4 cup pitted green olives, chopped
Preparation method
Prep: 10 mins | Cook: 25 mins1. Preheat broiler to High. Set the red pepper on a baking sheet and broil, turning a few times, until the skin blackens. Cool, then peel and chop.
2. Pour olive oil into a dutch oven and set over medium-high heat. Cook lamb in hot oil, stirring, until thoroughly browned.
3. Stir in carrot, onion, garlic, rosemary, salt, pepper, cloves, bay leaf, and orange zest. Cook for another 8 minutes to soften the onion, then add tomato paste. Cook for 1 minute, then add wine, stock, milk, olives, and roasted bell pepper.
4. Turn heat down to low and let the sauce simmer for about 15 minutes. Then serve over pasta or rice.
