Grilled vegetables with cheese recipe details
Ingredients
4 medium | zucchini, sliced |
2 | red bell peppers, cut into wide stripes |
8 tbsp | sun dried tomatoes in olive oil |
8 small | Mozarella cheese balls |
2 clove(s) | garlic, minced |
1 tsp | dried oregano |
1 tsp | dried basil |
olive oil | |
balsamic vinegar | |
salt and pepper, to taste | |
garlic bread, to serve |
Instructions
Combine zucchini slices with a little olive oil, balsamic vinegar, oregano, garlic, basil, and a pinch of salt and pepper. Toss well, cover and refrigerate over night.Cut bell peppers into wide strips and place with the zucchini slices on skewers. Grill for 3-4 minutes on each side, turning as necessary.
Serve with 2 tablespoons sun dried tomatoes, two balls of Mozarella cheese balls, and a thick slice of herbed garlic bread.
