Grilled vegetable salad recipe details
Ingredients
1 | eggplant, cut into slices lengthways |
1 | yellow bell pepper, sliced into chunky pieces |
1 | red bell pepper, sliced into chunky pieces |
2 | zucchini, sliced lengthways |
250 g | green beans |
1 | onion, chopped |
4 clove(s) | garlic |
250 g | cherry tomatoes, halved |

For the Dressing: | |
balsamic vinaigrette | |
salt and pepper, to taste |
Instructions
Place all vegetables onto a preheated BBQ grill along with sliced onion and whole garlic cloves.Brush with olive oil and season with salt and pepper. Cook until tender.
Combine vegetables in a bowl and season with the balsamic vinaigrette dressing.
