Ingredients
1. Tilapia fillets (2)
2. peeled, pitted and diced ripe mango (1large)
3. chopped fresh cilantro (1tbsp)
4. minced red onion (2tbsp)
5. diced red bell pepper (1/2)
6. seeded and minced jalapeno pepper (1)
7. lime juice (2tbsp)
8. lemon juice (1tbsp)
9. salt (1/2tsp)
10. extra virgin olive oil (1/3c)
11. minced fresh parsley (1tbsp)
12. ground black pepper (1tsp)
13. minced garlic (1clove)
14. dried basil (1tsp)

Method of preparation
1. Take a bowl, mix together the extra virgin olive oil, parsley, 1 tablespoon of lemon juice, 1/2 teaspoon of salt, basil, garlic and 1 teaspoon of pepper in it. Mix them properly and then pour it into the resealable plastic bag.

2. Add the tilapia fillets and coat them with the marinade, squeeze out the excess air and seal the bag. Keep it in the refrigerator to marinate for about 1 hour.

3. Take a bowl, mix mango, red onion, red bell pepper, jalapeno pepper and cilantro in the bowl to make the mango salsa. Add the 1 tablespoon of lemon juice, lime juice and then toss it well. Season it with salt and pepper to taste and then keep it in the refrigerator until it is ready to serve.

4. Preheat an outdoor grill for medium-high heat and lightly oil it. Take out the tilapia from the marinade. Now grill the fillets until the fish is no longer translucent in the center and flakes it easily with fork. Grill for about 3 to 4 minutes from each side. Now serve it with mango salsa.
