Grilled polenta with vegetables recipe details
Ingredients
200 g | polenta |
1 l | vegetable broth |
2 medium | zucchini, chopped |
1 medium | aubergine, chopped |
2 tsp | thyme leaves |
3 tbsp | olive oil |
70 g | Cheddar cheese |
Instructions
Put the polenta into a large saucepan and stir in the hot broth. Cook over a medium heat and cook, stirring until thick, for about 5 minutes. Spoon into a greased tin about 1cm deep and smooth the top and cool until set.Shred zucchini and daubergine in a potato peeler to make long, thin ribbons. Put into a bowl with the thyme, drizzle 2 tablespoons of oil over it and toss together.
Run a knife around the set polenta, turn out and cut into 8 pieces.
Heat a pan and cook the polenta over a medium heat for 5 minutes, then turn over and cook for a further 5 minutes until golden. Set aside on a large baking sheet.
Sauté the vegetables over a high heat for 3-4 minutes, turning to colour evenly. Divide between the polenta, then crumble over the cheese and season.
Preheat the grill.
Grill for 2 minutes, until the cheese has melted.
