Grilled new potatoes with green beans recipe
Grilled New Potatoes with Green Beans recipe⚠ Note: for metric to imperial (or vice-versa) conversion please refer to our article on Cooking Measurements 101.
- 2 pounds new potatoes, brushed with light olive oil and salt and pepper, then grilled or roasted
- 1/4 pound steamed fresh green beans (yellow wax beans work, too)
- Basil Garlic Vinaigrette
- Additional Champagne vinaigrette
- 12 Nicoise or Calamata olives
Combine potatoes and beans with vinaigrette. Adjust seasonings with additional vinegar, salt and pepper to taste. You might also add roasted red peppers or halved cherry tomatoes. Toss olives in and serve on a bed of crisp greens.
