Grilled leg of lamb recipe details
Ingredients
2 kg | boneless leg of lamb, butterflied but not tied |
125 ml | extra virgin olive oil, plus more for grilling |
75 ml | red wine vinegar |
4 clove(s) | garlic, chopped |
2 tbsp | fresh oregano, chopped |
1 tbsp | fresh thyme leaves, chopped |
1 | lemon, juice only |
1 tbsp | Dijon mustard |
125 g | mixed baby greens |
½ bunch(es) | mint, leaves only |
3 | sliced scallions |
salt and fresh ground pepper to taste |
Instructions
Vinaigrette:Add the oil, garlic, oregano, thyme, lemon juice and mustard into a blender and season with salt and pepper. Blend until thoroughly combined.
Lamb:
Pat the lamb dry and put on a shallow platter. Season with salt and pepper.
Pour half the vinaigrette over the lamb, turning the meat to get it well coated. Marinate in refrigerator for 2 hours.
Remove the marinated meat from the refrigerator about 30 minutes before grilling. Heat the grill (or a large cast iron skillet) and oil it lightly. Grill lamb for about 15-20 minutes per side for medium-rare (adjust the time accordingly for other degrees of doneness). Transfer to a cutting board and let rest for 10 minutes.
Greens:
Toss the baby greens, mint leaves and scallions in a bowl and add 3 tablespoons of the vinaigrette dressing.
Slice the lamb into thick slices and serve with greens.
