Ingredients

2 kg boneless leg of lamb, butterflied but not tied
125 ml extra virgin olive oil, plus more for grilling
75 ml red wine vinegar
4 clove(s) garlic, chopped
2 tbsp fresh oregano, chopped
1 tbsp fresh thyme leaves, chopped
1  lemon, juice only
1 tbsp Dijon mustard
125 g mixed baby greens
½ bunch(es) mint, leaves only
3  sliced scallions
salt and fresh ground pepper to taste

Instructions

Vinaigrette:
Add the oil, garlic, oregano, thyme, lemon juice and mustard into a blender and season with salt and pepper. Blend until thoroughly combined.

Lamb:
Pat the lamb dry and put on a shallow platter. Season with salt and pepper.

Pour half the vinaigrette over the lamb, turning the meat to get it well coated. Marinate in refrigerator for 2 hours.

Remove the marinated meat from the refrigerator about 30 minutes before grilling. Heat the grill (or a large cast iron skillet) and oil it lightly. Grill lamb for about 15-20 minutes per side for medium-rare (adjust the time accordingly for other degrees of doneness). Transfer to a cutting board and let rest for 10 minutes.

Greens:
Toss the baby greens, mint leaves and scallions in a bowl and add 3 tablespoons of the vinaigrette dressing.

Slice the lamb into thick slices and serve with greens.
