Ingredients
Serves: 4- 2 cloves garlic, minced
- 1/2 bunch parsley
- 1/4 cup olive oil
- 2 tablespoons chopped red onion
- 2 tablespoons fresh thyme leaves
- 1 tablespoon cider vinegar
- 1 1/2 teaspoons mustard seeds, toasted
- Salt and pepper
- 1 1/2 pounds flank steak, at room temperature
Preparation method
Prep: 10 mins | Cook: 15 mins1. Pulse garlic, parsley, olive oil, onion, thyme, vinegar, mustard seeds, 1 teaspoon salt, and 1/2 teaspoon pepper together in a food processor until smooth.
2. Toss steak with 2 tablespoons of the chimichurri and let stand for 15 minutes. Preheat grill to high heat and lightly oil grate.
3. Place steak on grill and close lid. Cook for about 5 minutes, then flip and cook for 3 to 8 more minutes, until meat reaches an internal temperature of 160 degrees F (for medium).
4. Let steak rest off the grill for 10 minutes, then slice and serve with the rest of the chimichurri on top.
