A hefty helping of chicken, slathered with your favorite barbecue sauce, is the ideal topping for this grilled pizza.

Ingredients
Serves: 4- 1 (1/4 ounce) packet active dry yeast
- 1 cup warm water
- 2 tablespoons canola oil
- 2 teaspoons sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 3/4 cups flour
- 2 cups cubed cooked chicken (see footnote)
- 1/2 to 3/4 cup barbecue sauce
- 1/2 cup thinly sliced green bell pepper
- 2 cups shredded Monterey Jack cheese
Preparation method
Prep: 20 mins | Cook: 10 mins | Extra time: 10 mins, resting1. Stir yeast into warm water in a large glass or plastic mixing bowl. Let the mixture sit for 5 minutes, then stir in oil, sugar, baking soda, salt, and 2 cups flour. Continue adding flour a little at a time until the dough forms a sticky but soft ball.
2. Preheat grill to medium heat and coat a baking sheet or 12-inch pizza pan with nonstick cooking spray.
3. Sprinkle a little flour onto a clean working surface and set the dough on top of the flour. Using your hands, fold the dough over onto itself and stretch it back out; repeat the kneading motion for about 6 minutes, until the dough smooths out and stops stretching so easily.
4. Cover dough with a clean towel. Let it sit for 10 minutes, then roll out to form a 12-inch circle. Set on prepared baking sheet.
5. Place baking sheet on the grill and close the lid. Cook for about 5 minutes. Meanwhile, toss chicken with barbecue sauce in a bowl.
6. Remove pizza crust from grill and top with chicken and barbecue sauce mixture. Add bell pepper and Monterey Jack cheese, then return to the grill. Close the lid.
7. Cook for 5 to 10 more minutes to finish cooking the crust and to melt the cheese. Remove from grill, slice into wedges, and serve.To quickly cook chicken:
For 2 cups cubed cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 1 pound skinless, boneless chicken breasts or thighs, cubed, for 5 minutes or until chicken is no longer pink.
