Grilled Chicken Fruit Salad recipe
|100 g||chicken breast, boneless, skinless, fried, diced|
|100 g||rice, cooked|
|30 g||pineapple, crushed, rained|
|60 g||red grapes, seedless, halved|
|3 tsp||lemon juice|
|2 tsp||shredded coconut|
|1 tbsp||plain yogurt|
|salt and pepper, to taste|
Mix together the rice, pineapple, banana, grapes and lemon juice.
In a small bowl combine the, coconut, yogurt and mayonnaise. Add the chicken and rice mixture stirring well to coat. Season with salt and pepper.
