Grilled Chicken Fruit Salad recipe
Ingredients
100 g | chicken breast, boneless, skinless, fried, diced |
100 g | rice, cooked |
30 g | pineapple, crushed, rained |
½ | banana, sliced |
60 g | red grapes, seedless, halved |
3 tsp | lemon juice |
2 tsp | shredded coconut |
1 tbsp | plain yogurt |
2 tsp | mayonnaise |
salt and pepper, to taste |
Instructions
Mix together the rice, pineapple, banana, grapes and lemon juice.
In a small bowl combine the, coconut, yogurt and mayonnaise. Add the chicken and rice mixture stirring well to coat. Season with salt and pepper.
