Ingredients
Serves: 6- 2 bunches asparagus, stems removed
- 1/4 cup pine nuts, toasted
- 10 mint leaves
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Sea salt and black pepper
Preparation method
Prep: 5 mins | Cook: 5 mins1. Preheat grill to medium.
2. Place asparagus on grill and cook for 2 to 3 minutes on each side. Transfer to a cutting board.
3. Cut asparagus stalks in half and place in a bowl. Toss with pine nuts, mint, olive oil, and lemon juice; sprinkle with salt and pepper to taste.
