Grilled Asparagus recipe
Ingredients
600 g | asparagus, woody ends removed |
For the sauce: | |
garlic, crushed | |
20 ml | white wine vinegar |
60 ml | olive oil |
1 | hard boiled eggs, peeled and chopped |
1 | tomato, peeled, seeded and diced |
salt and pepper, to taste |
Instructions
In a bowl combine the oil and vinegar with garlic, egg and tomato and purée with a hand blender. Season to taste with salt ansd pepper.
On an oiled griddle pan fry the asparagus for 4-5 minutes each side.
Serve the asparagus drizzled with the sauce.
