Grilled Asparagus recipe
|600 g||asparagus, woody ends removed|
|For the sauce:|
|20 ml||white wine vinegar|
|60 ml||olive oil|
|1||hard boiled eggs, peeled and chopped|
|1||tomato, peeled, seeded and diced|
|salt and pepper, to taste|
In a bowl combine the oil and vinegar with garlic, egg and tomato and purée with a hand blender. Season to taste with salt ansd pepper.
On an oiled griddle pan fry the asparagus for 4-5 minutes each side.
Serve the asparagus drizzled with the sauce.
