Ingredients

• 1 (15 ounce) can diced tomatoes with Mexican spices
• 1/3 cup red enchilada sauce
• 1 medium onion, chopped
• 2 cloves garlic, minced
• 2 cups water
• 1 (14.5 ounce) can chicken broth
• 1 teaspoon cumin
• 1 teaspoon chili powder
• 1 teaspoon salt
• 1/4 teaspoon black pepper
• 1 pound boneless skinless chicken (breast or thigh), diced
• 1 (15 ounce) can golden hominy
• 3 tablespoons chopped cilantro
• 2 limes, juiced

Preparation method

Prep: 30 mins | Cook: 8 hours

1. In a heavy-bottomed saucepan, combine all ingredients except chicken, hominy, and lime juice. Place pan on grill and bring to a boil.
