Ingredients
Serves: 8- 1 (15 ounce) can diced tomatoes with Mexican spices
- 1/3 cup red enchilada sauce
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups water
- 1 (14.5 ounce) can chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound boneless skinless chicken (breast or thigh), diced
- 1 (15 ounce) can golden hominy
- 3 tablespoons chopped cilantro
- 2 limes, juiced
Preparation method
Prep: 30 mins | Cook: 8 hours1. In a heavy-bottomed saucepan, combine all ingredients except chicken, hominy, and lime juice. Place pan on grill and bring to a boil.
2. Simmer for 10 minutes, then add chicken and hominy. Simmer for another 5 to 8 minutes to poach the chicken and warm up the hominy.
