Ingredients
150 g | rice |
1 small | onion, chopped finely |
1 clove(s) | garlic, chopped finely |
1 | green bell pepper |
200 g | spinach leaves |
250 ml | vegetable stock |
1 tbsp | olive oil |
salt and pepper |
Instructions
Heat olive oil in a saucepan. Sauté onion and garlic until lucent. Add the bell pepper and rice. Season with salt and pepper. Add the vegetable stock and bring to a boil. Switch the heat to low and cook for 15-20 minutes or until the rice is done. Mix in the fresh spinach and cook for just another minute.
Goes well with any kind of fried meat or fish or as a vegetarian dish with eggs.
