Green mountain lemon bread
Green Mountain Lemon Bread recipe
Our cake-like bread is a favorite with guests.
- 1-1/2 cups flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- lemon glaze (1/3 cup sugar dissolved in microwave in juice of 1 lemon)
- 2 eggs
- 1/2 cup milk
- 1/2 cup oil
- grated peel of one lemon
Combine dry ingredients. Combine wet ingredients, then add to dry ingredients; mix thoroughly. Pour batter into 4-1/2 x 8-1/2 inch greased loaf pan and bake at 325 degrees until toothpick inserted in center comes out dry–approximately 1 hour. Cool ten minutes. Using a chop stick or ice pick, poke 20 holes in loaf. Drizzle hot lemon glaze over loaf. Cool completely.
