Ingredients

3  green bell peppers, halved
100 g white bread, cubed
1  cucumber, diced
1  lime, grated rind and juice
1  green chili pepper, chopped
1  onion, chopped
1 clove(s) garlic, minced
4 tbsp extra virgin olive oil
salt and freshly ground black pepper

Instructions

Preheat the oven to 180°C. Place the bell pepper halves skin-side up onto a lined baking tray. Bake or grill until the skin is charred. Remove from the heat and cover with a damp kitchen towel. Peel the bell peppers and chop roughly.

Place the bell peppers, cucumber, garlic, oil, chili, onion and bread into a blender and process until smooth. Transfer into a measuring jug and add water up to 1 litre. Mix well and season to taste with lime juice, salt and pepper. Chill the soup.

Serve the soup in soup plates, sprinkled with a little lime zest.
