Green gazpacho recipe details
Ingredients
3 | green bell peppers, halved |
100 g | white bread, cubed |
1 | cucumber, diced |
1 | lime, grated rind and juice |
1 | green chili pepper, chopped |
1 | onion, chopped |
1 clove(s) | garlic, minced |
4 tbsp | extra virgin olive oil |
salt and freshly ground black pepper |
Instructions
Preheat the oven to 180°C. Place the bell pepper halves skin-side up onto a lined baking tray. Bake or grill until the skin is charred. Remove from the heat and cover with a damp kitchen towel. Peel the bell peppers and chop roughly.Place the bell peppers, cucumber, garlic, oil, chili, onion and bread into a blender and process until smooth. Transfer into a measuring jug and add water up to 1 litre. Mix well and season to taste with lime juice, salt and pepper. Chill the soup.
Serve the soup in soup plates, sprinkled with a little lime zest.
