Red fruit with cream recipe details
Ingredients
450 g | red currants |
450 g | raspberries |
450 g | blackcurrants |
85 g | cornflour |
blanched almonds | |
225 g | sugar, but use up to 450g if required |
stick(s) | cinnamon, optional OR |
1 tsp | vanilla extract, optional |
Instructions
Rinse the fruit and allow to drain. Place in large pan with sufficient water to cover. Cook until fruit is almost indistinguishable.Cover a sieve with a double layer of muslin and pour contents through the sieve into a large bowl. Squeeze the fruit to extract all the juices.
Pour the juices into a clean pan and bring to a boil with the sugar. Add cinnamon if wished. Adjust sweetness as it cooks. Mix cornflour with a little cold water and add to the juices, stirring constantly. Boil for 2 minutes and remove from heat and allow to cool.
If you did not use the cinnamon, you may wish to add up to 1 tsp vanilla extract when the juice is cool.
Ladle into individual dishes, sprinkle with sugar, add a few almonds and pour cream on top to serve.
