Green bean soup recipe details
Ingredients
2 ¼ l | vegetable stock or beef stock |
750 g | potatoes |
1.2 kg | green beans |
1 bunch(es) | savory |
150 g | bacon (pancetta) |
3 | onions |
200 g | mushrooms |
300 g | crème fraîche |
150 g | smoked ham |
salt and pepper | |
4 tbsp | parsley, chopped |
Instructions
Bring the vegetable stock to a boil.Meanwhile peel and dice the potatoes. Trim the ends and cut the green beans in pieces. Add the potatoes, the beans and the savory to the soup, reboil and simmer for 15 minutes or until the potatoes are done. Remove the savory.
Dice the bacon and ham and slice the mushrooms. In a skillet sauté the onions, mushrooms and bacon.
Add the onions, bacon, ham, mushrooms and crème fraîche to the soup. Simmer for another 2 minutes and season to taste with salt and pepper.
Sprinkle with freshly chopped parsley and serve.
