Greek lemon and honey cake recipe details
Ingredients
45 g | margarine |
4 tbsp | clear honey |
1 large | lemon, zest and juice |
150 ml | milk |
150 g | plain flour |
1 tsp | baking powder |
½ tsp | grated nutmeg |
60 g | medium semolina |
2 medium | egg, white only |
2 tsp | sesame seeds |
Instructions
Preheat oven to Gas Mark 5, 190°C, 375°F.Grease and line a 7-8 inch square baking tin.
Heat margarine and 3 tablespoons of honey together in a small pan until melted. Reserve 1 tbsp of lemon juice and add the remainder and the milk to the honey.
Sift flour, baking powder and nutmeg into a bowl. Add the semolina and then beat in the honey mixture.
Whisk the egg whites in a clean bowl until soft peaks form and fold them into the mixture.
Spoon batter into tin and bake for about 25 minutes until golden and firm. While still in the tin and warm, drizzle with remaining honey and lemon juice. Cool in the tin and then turn out to cool fully and cut into fingers.
