Great slow cooker chuck roast recipe details

Ingredients
Serves: 6- 1 onion, sliced
- 1 green bell pepper, sliced
- 1 celery rib, chopped
- 1 (2 to 3 pound) boneless beef chuck roast
- 1 (14 1/2 ounce) can Italian stewed tomatoes
- 1/2 cup beef broth
- 1/2 cup ketchup
- 3 tablespoons brown sugar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons prepared mustard
- 3 garlic cloves, minced
- 1 tablespoon soy sauce
- 2 teaspoons pepper
- 1/4 teaspoon crushed red pepper flakes, or more according to taste
- 3 tablespoons cornstarch
- 1/4 cup cold water
Preparation method
Prep: 20 mins | Cook: 5 hours1. Coat the slow cooker pot with nonstick cooking spray. Place vegetables in the bottom of the slow cooker, then position the roast on top. (This way the veggies cook in the drippings from the roast). Pour the remaining ingredients–except cornstarch and water–over the roast.
2. Cook on Low for 6 hours. Then, with a slotted spoon, strong spatula, or other sturdy tool, take the meat and vegetables out of the slow cooker.
3. Whisk together the cornstarch and cold water in a small bowl. Stir the mix into the juices left in the slow cooker and stir, with the slow cooker still on Low. Let sit for a few minutes to thicken the sauce, adding more cornstarch/water mix if necessary.
4. Slice the roast and slather with the thickened sauce. Serve to your very happy diners.
