Grannie's bara brith recipe is a traditional Welsh fruit loaf that has been passed down through generations. Ingredients

225 g dried mixed fruit
300 ml boiling water
3  tea bags, a strong brew blend, or use 4 or more of a milder blend
175 g soft brown sugar
225 g self-raising flour
1 large egg
½ tsp mixed spice
½ tsp ground cinnamon

Instructions

Preheat the oven to Gas Mark 3, 170°C, 325°F.

Grease a 2lb, 900g loaf tin and line the bottom with parchment.

Brew the tea in a bowl using the boiling water, stir and leave for 5 minutes. Remove the tea bags.

Pour the tea over the dried fruit with the sugar, cover and leave overnight.

Mix all the dry ingredients in a bowl. Mix in the egg and the fruit with all the liquid. Mix to a batter and pour into the lined tin.

Bake on the top shelf of the oven for 1½-1¾ hours until a skewer inserted into the centre comes out clean.

Leave to cool in the tin for 10 minutes and then turn out onto a wire rack to cool completely.

Slice when cold and serve buttered, if wished.
