Grannie s bara brith recipe details
Ingredients
225 g | dried mixed fruit |
300 ml | boiling water |
3 | tea bags, a strong brew blend, or use 4 or more of a milder blend |
175 g | soft brown sugar |
225 g | self-raising flour |
1 large | egg |
½ tsp | mixed spice |
½ tsp | ground cinnamon |
Instructions
Preheat the oven to Gas Mark 3, 170°C, 325°F.Grease a 2lb, 900g loaf tin and line the bottom with parchment.
Brew the tea in a bowl using the boiling water, stir and leave for 5 minutes. Remove the tea bags.
Pour the tea over the dried fruit with the sugar, cover and leave overnight.
Mix all the dry ingredients in a bowl. Mix in the egg and the fruit with all the liquid. Mix to a batter and pour into the lined tin.
Bake on the top shelf of the oven for 1½-1¾ hours until a skewer inserted into the centre comes out clean.
Leave to cool in the tin for 10 minutes and then turn out onto a wire rack to cool completely.
Slice when cold and serve buttered, if wished.
