Fruity spaghetti with shrimp recipe details
Ingredients
½ | cucumber, sliced |
400 g | mango, diced |
1 large | onion, chopped |
1 small | piece of ginger, chopped |
150 g | cherry tomatoes, halved |
1 bunch(es) | basil, chopped |
200 g | shrimp, ready to cook |
2 clove(s) | garlic, minced |
400 g | spaghetti |
salt and freshly ground black pepper | |
2 tbsp | olive oil |
1 tsp | curry powder |
3 tbsp | tomato puree |
250 ml | water |
Instructions
Cook the pasta in salted water until al dente, then drain.In a pan heat the oil and stir-fry the shrimp until just done. Remove from the pan and set aside. Sauté the onion, garlic and the ginger. Stir in the tomato purée and the curry powder and cook stirring for 1 minute. Pour in the water and cook for 3-4 minutes. Add the tomatoes. Season to taste with salt and pepper.
Mix together the cooked spaghetti, shrimp, mango, cucumber and the sauce. Serve immediately sprinkled with basil.
