Grandma's chickpea casserole recipe details
This is my updated and simplified version of my Grandma’s chickpeas that were always comforting. A rustic dish that is specially good in winter and very easy to make. Serve along with a good rustic bread, olives, cheese and a good Spanish wine.
Ready in: 1 hour 30 mins
Ingredients
Serves: 8- 2 tablespoons extra virgin olive oil
- 1/2 pound any firm sausage (bratwurst, Polish sausage or Spanish chorizo)
- 1/2 pound ham in small cubes (can use leftover meats)
- 1 thick slice bacon in cubes
- 1/2 cup finely chopped onions
- 1/2 cup finely chopped red peppers
- 4 cans cooked chickpeas
- 1 jar traditional or chunky style pasta sauce
- 2 cups water
Preparation method
Prep: 20 mins | Cook: 1 hour 10 mins1. In a large pot or casserole, if ceramic better, heat the olive oil and cook in it the sausage, ham or leftover meats and bacon until thoroughly cooked and starting to brown.
2. Add the onions and peppers and cook until soft and transparent.
3. Incorporate the drained chickpeas and the pasta sauce and water.
4. Simmer for an hour or so until thick.
