Grandma sylvia's brisket recipe details
This is a different type of brisket recipe of eastern Jewish European influence. Unlike most briskets that are cooked in the oven, this brisket is simmered. Best to prepare a day or so in advance; by refrigerating the brisket becomes firm and makes it easier to trim fat off and to slice. Freezes and reheats well.
Ready in: 15 hours
Ingredients
Serves: 4- 2-1/2 pounds brisket
- 2 (6 ounce) cans tomato paste
- 3/4 cup water
- 2 onions, wedged
- 3 carrots, sliced
- 1/4 pound mushrooms, sliced
- 1 tablespoon garlic powder
- 1 tablespoon sugar
- salt and black pepper to taste
Preparation method
Prep: 11 hours | Cook: 3 hours 30 mins | Extra time: 30 mins, rising1. Brown brisket in a skillet on both sides.
2. Place in a deep pot. Add tomato paste, water, onions, carrots, mushrooms, and seasoning. Bring to a boil. Cover. Reduce heat; let simmer for 2-1/2 hours.
3. Let cool and place in a refrigerator overnight.
4. Preheat oven to 300 degrees F (150 degrees C).
5. Skim off fat residue from top of sauce. Slice down brisket across grain. As slicing, place in a 8×12 inch baking dish, adding the cooking sauce and vegetables between layers.
6. Bake in the preheated oven for 1 hour.
