- Ingredients
- 1 cup sugar
- 1 cup flour
- 3/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1 cup grated raw carrots
- 1 cup grated raw potatoes
- 1 cup raisins
- 1 cup nuts
- Ingredients for Hard Sauce
- 1 beaten whole egg
- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup cream or canned milk
- butter
- 1 teaspoon vanilla
Grandma Irene McClain was a remarkable woman. When she was in her early 20’s, she graduated from college. Then she boarded a train and went west to Manzanola, Colorado to become a school teacher. This was not something most young women did in her time. She married, had three children, and lost her husband when the children were very young. After he died, she took over his job as Postmaster in this small Colorado town. There she worked and raised her family. She never remarried. In her mid 80’s, she moved from Manzanola to Denver, into retirement living. Just this year, she moved again to Corpus Christi, Texas to be closer to one of her daughters. During the holiday’s, Grandma McClain would make Steamed Christmas Pudding. She always steamed it in juice cans, which I don’t know if you can buy anymore.…Leanne McClain
Mix together. Steam in small cans for 2 or 3 hours or until sides break away from cans.
Use 1-pound coffee cans, or something smaller. Cover top of cans with aluminum foil and set on rack in pan of steaming water that comes about 1/2 to 3/4 way up the cans. Serve with
Heat only enough to dissolve and blend. Do not cook.
