Gran s german potato bread recipe details
Ingredients
1 kg | plain flour |
1 kg | potatoes, peeled, washed and grated |
2 medium | eggs |
2 packet(s) | dried yeast*** |
1 tbsp | salt |
250 ml | tepid water |
Instructions
In a bowl mix flour, yeast and salt. Drain the liquid of the potatoes and mix the potatoes with the flour mixture. Make a well in the middle, add in the eggs and the water and mix with the other the ingredients. Knead for a few minutes until the dough comes clean off the bowl. Cover and and allow to rise in a warm place until almost doubled in size.Transfer the dough into 1 large or 2 small loaf pans, cover and leave for at least another 30 minutes in a warm place.
Meanwhile preheat the oven to 220°C (200°C fan assisted).
Bake for 75 – 90 minutes; watch closely towards the end of the baking time, as every oven is different.
*** Of course you can use fresh yeast, as I do. The quantities differ from country to country. Here in Spain I use 25 g fresh yeast per 500 g flour.
This is an original recipe from my friend Verena’s gran. For me it tastes best when still a bit warm with fresh butter. After a couple of days it’s also fantastic as fried bread !
