Ingredients
Serves: 4- 1/2 cup mayonnaise
- 1 garlic clove, minced
- 2 teaspoons fresh lemon juice
- 1 teaspoon grated lemon rind
- 1 teaspoon drained capers, chopped
- 1/4 teaspoon red-pepper sauce
- 1 cup graham cracker crumbs
- 3/4 cup flour
- 1 teaspoon salt
- 3/4 cup buttermilk
- 1 pound cleaned squid bodies, cut into 1/4-inch rings
- 4 cups canola oil
Preparation method
Prep: 15 mins | Cook: 5 mins1. Whisk mayonnaise with garlic, lemon juice, lemon zest, capers, and red-pepper sauce in a bowl.
2. In a shallow pan, stir together graham crackers, flour, and salt. In a second shallow pan, place squid in buttermilk.
3. Heat oil to 360 degrees F in a deep fryer.
4. Drain squid from buttermilk, then dredge rings in graham cracker combination. Working in batches, drop into the hot oil and fry for 1 minute per batch.
5. Serve with lemon mayonnaise mixture for dipping.
