Calamari and prawns on lemon grass skewers recipe details
Ingredients
2 | calamari steaks, cut into large pieces |
8 | prawn tails, deveined |
8 | lemon grass stalks |
8 | baby tomatoes |
Marinade: | |
85 ml | sunflower oil |
2 clove(s) | garlic, finely chopped |
2 | spring onions, thinly sliced |
15 ml | fresh coriander |
30 ml | soy sauce |
1 tsp | brown sugar |
1 tbsp | lime juice |
2 tsp | chilli paste |
Instructions
Mix the ingredients for the marinade in a large bowl. Add calamari and prawns, cover and refrigerate for 1 hour.Trim lemon grass stalks to about 20 cm and cut the root end diagonally. Use a sharp skewer to pierce each piece of calamari and prawn. Thread a prawn, tomato and calamari piece on each lemon grass skewer.
Barbecue or grill for about 5 minutes, turning occasionally.
Serve as a snack, starter or with a salad of cucumber and peanuts.
