Ingredients

50 g soft butter
50 g caster sugar
50 g brown sugar
1  egg, beaten
1  banana, mashed
50 ml vegetable oil
50 g almond meal
125 g plain flour
½ tsp ground ginger
½ tsp baking powder
50 ml milk
4 tbsp golden syrup
some walnut pieces
some golden syrup to serve
some thick cream to serve
some ice cream to serve

Instructions

Preheat oven to 170ºC.

Cream butter and sugar, add egg and mix.

Combine banana and oil and add to butter mixture. Fold in almond meal, flour, ginger, baking powder and milk. Mix until just combined.

Grease four pots of a muffin tray (ø 8cm) with butter. Fill each with 1 tbsp golden syrup. Add pudding mix and bake for about 25 minutes.

Allow to stand for 5 minutes. Remove from tin, place upside down on a plate and garnish with walnut pieces.

Serve, drizzled with golden syrup and whipped cream and/or ice cream.
