Goat s Cheese Pepper and Red Onion Frittata recipe

|1 medium||red onion, sliced|
|1 large||red pepper, coarsely chopped|
|100 g||goat’s cheese|
|salt and fresh ground pepper, to taste|
|parsley, for decoration|
|chives, for decoration|
Beat the eggs and season well.
Finely chop the herbs and set aside.
Heat a little oil and a small knob of butter in a small frying pan. Add the onion and red pepper and fry for 3-4 minutes until softened. Add the eggs and cook for 5-6 minutes until just setting.
Dot pieces of the goat’s cheese over the top and sprinkle the herbs over the top.
Move the pan to the grill and cook for about 2-3 minutes on a medium-high heat until golden.
Cut into wedges and serve with a salad of choice.
Use half each of yellow and orange peppers to replace the red pepper. Use a combination of mushrooms and courgettes instead.
