Goat s cheese and tomato tart recipe details
Ingredients
For the pastry: | |
225 g | plain flour |
125 g | unsalted butter |
½ tsp | salt |
1 large | egg, beaten |
3 tbsp | water, cold |
For the Filling: | |
Dijon or whole grain mustard | |
3 large | tomatoes |
2 tbsp | olive oil |
2 tbsp | rounded, chopped fresh herbs – thyme, chives, chervil, tarragon, basil etc |
250 g | goats’ cheese, fresh or slightly aged |
salt and fresh ground pepper to taste | |
1 ½ tbsp | honey, but goes well with many goats’ cheeses |
Instructions
Preheat oven to Gas Mark 7, 425°F, 220°C. Grease an 8-9 inch, 20-23cm pie or tart tin.Pastry:
Mix flour and salt in a bowl. Rub in butter to breadcrumb stage.
Mix the egg with 2 tbsp water. Make a well in the flour and pour the egg mixture into that. Bring the flour to the egg and mix to form a dough. Add a little more water if required. Form the dough into a ball and roll out on a lightly floured surface, sufficient to fit the dish bottom and sides.
Carefully lift on rolling pin and place into position. Carefully position the pastry to fit into corners etc. Roughly trim excess pastry.
Filling:
Spread a layer of mustard across the base of the tart and allow it to rest until the mustard dries.
Slice the tomatoes and arrange the slices in a single, even layer. Drizzle the oil over the tomatoes, season, and sprinkle with some of the herbs. Slice the cheese and arrange that on top, followed by the remainder of the herbs. If using the honey, sprinkle that too.
Bake for about 30 minutes until dough is cooked and the tomatoes are tender. The cheese should be nicely browned but, if not, place the tart until the grill for a few minutes until browned sufficiently.
Will serve 4-6. Trim excess pastry. Cut into wedges and serve immediately as a delicious starter.
Suggestion:
If you do not like goats’ cheese, use Camembert or other similar soft melting cheese, omit honey and use a little extra olive oil.
