Gnocchi with salmon and rocket recipe details
Ingredients
250 g | gnocchi |
250 g | salmon fillet, sliced |
200 g | tomatoes, diced |
1 bunch(es) | rocket |
1 | onion, chopped |
100 ml | single cream |
salt and pepper | |
some | tomato puree |
½ bunch(es) | basil, chopped |
1 tbsp | lemon juice |
1 tbsp | oil |
1 clove(s) | garlic, minced |
sugar |
Instructions
Cook the gnocchi in salted water until done, set aside and keep warm.In a pan, heat the oil. Add the salmon and sprinkle with lemon juice and pepper. Cook over medium heat 1 minute or until just done. Remove from the pan and set aside.
Add to the pan the onion and garlic and cook until golden. Add the tomatoes and the basil. Cook over low heat for 5 minutes. Season with salt, pepper, sugar and tomato purée.
Stir in the single cream and the salmon and simmer for another minute. Carefully stir in the rocket and let steep for a minute.
Serve immediately with the gnocchi.
