Gnocchi with bacon and vegetable sauce recipe details
Ingredients
500 g | gnocchi, from the fridge or freezer compartment |
1 | eggplant, diced |
1 | yellow capsicum, diced |
100 g | brown mushrooms, chopped |
150 g | diced bacon bits |
1 | onion, chopped |
2 clove(s) | garlic, chopped |
½ bunch(es) | fresh parsley, chopped |
150 ml | whipping cream |
100 g | freshly grated Parmesan cheese |
salt and pepper | |
rosemary | |
oregano | |
chili flakes | |
oil, for cooking |
Instructions
Heat some oil in a wide pan and fry the onion and garlic. Then add the bacon bits and fry for 2 more minutes. Add the vegetables and the herbs and cook stirring over medium heat for 20 minutes. Season to taste with salt, pepper and chili.Meanwhile cook the gnocchi as advised on the package.
Add the whipping cream, parsley and the Parmesan cheese to the vegetables and mix well. Check seasoning and correct if necessary.
When the gnocchi are cooked, add them into the sauce and serve hot.
