Gingered Sweet Potato Soup recipe

Ingredients
1 kg | sweet potato, peeled and cut into chunks |
1 l | water or homemade chicken stock |
2 cube(s) | chicken stock (only if using water) |
2 | bay leaves |
1 | fresh ginger, peeled and sliced |
250 ml | orange juice |
1 tbsp | white port or fortified wine (Hanepoot) |
2 tbsp | brown sugar |
1 tbsp | grated ginger |
1 tsp | ground cumin |
Instructions
Bring the water and/or stock to the boil. Add sweet potatoes, bay leaves, brown sugar, ground cumin and sliced ginger. Cook over medium heat until the sweet potato is soft. Remove bay leaves and slices of ginger.
Process the sweet potation and the cooking liquid a blender until smooth.
Hint: Instead of using all the cooking liquid, rather add it gradually to achieve the desired consistency, depending on how thick or creamy you want the soup to be.
Pour soup into a saucepan and gently bring to a boil.
Add the grated ginger, white port, orange juice, and salt and black pepper to taste.
Simmer for about two minutes and serve in heated soup bowls with crusty bread or a warm garlic loaf.
