Gingerbread yule log recipe details
Ingredients
3 medium | eggs, yolks and whites separated |
120 ml | molasses |
1 tbsp | butter, melted |
30 g | sugar |
100 g | flour |
½ tsp | baking soda |
½ tsp | baking powder |
½ tsp | cloves, ground |
½ tsp | ginger, ground |
½ tsp | cinnamon, ground |
⅛ tsp | salt |
For the Cream Filling: | |
300 ml | whipping cream |
40 g | sugar |
1 tsp | cinnamon, ground |
2 tsp | vanilla extract |
Instructions
Beat egg yolks until thickened, about 3 minutes. Add molasses and butter and beat until smooth.In another bowl, beat whites until foamy; add sugar, beating until soft peaks form.
Combine both mixtures.
Mix together dry ingredients and gently fold into egg mixture until well mixed.
Line a greased baking pan with waxed paper and grease and flour paper. Spread batter into pan.
Preheat oven to 180°C and bake for 9-12 minutes.
When ready, turn onto a linen towel dusted with confectioners’ sugar. Peel off paper and roll cake up in towel. Cool on a wire rack.
For the filling, beat the cream, sugar, cinnamon, vanilla and cloves in a mixing bowl until soft peaks form. Unroll cake and spread with half the filling. Roll up. Spread remaining filling over cake and sprinkle with more cinnamon.
