This gingerbread yule log recipe is a delightful twist on the classic holiday dessert. Made with a rich and moist gingerbread cake, filled with a creamy whipped cream frosting, and rolled into a log shape, it is the perfect centerpiece for any festive gathering. The warm spices of ginger, cinnamon, and nutmeg infuse every bite, creating a comforting and aromatic treat. Ingredients

3 medium eggs, yolks and whites separated
120 ml molasses
1 tbsp butter, melted
30 g sugar
100 g flour
½ tsp baking soda
½ tsp baking powder
½ tsp cloves, ground
½ tsp ginger, ground
½ tsp cinnamon, ground
⅛ tsp salt
For the Cream Filling:
300 ml whipping cream
40 g sugar
1 tsp cinnamon, ground
2 tsp vanilla extract

Instructions

Beat egg yolks until thickened, about 3 minutes. Add molasses and butter and beat until smooth.

In another bowl, beat whites until foamy; add sugar, beating until soft peaks form.

Combine both mixtures.

Mix together dry ingredients and gently fold into egg mixture until well mixed.

Line a greased baking pan with waxed paper and grease and flour paper. Spread batter into pan.

Preheat oven to 180°C and bake for 9-12 minutes.

When ready, turn onto a linen towel dusted with confectioners’ sugar. Peel off paper and roll cake up in towel. Cool on a wire rack.

For the filling, beat the cream, sugar, cinnamon, vanilla and cloves in a mixing bowl until soft peaks form. Unroll cake and spread with half the filling. Roll up. Spread remaining filling over cake and sprinkle with more cinnamon.
