Gingerbread with grand marnier fruit salad recipe details
- Ingredients:
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon ground cloves
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg
- 8 Tablespoons butter
- 1/2 cup molasses
- 1/4 cup honey
- 1/2 cup dark brown sugar
- 3 eggs
- 1 Tablespoon lemon zest
- 4 Tablespoons powdered sugar
- Grand Marnier Fruit Salad:
- 2 red plums, cut in 1/2-inch pieces
- 2 peaches, cut in 1/2-inch pieces
- 6 ounces strawberries
- 1/2 orange, juiced
- 2 Tablespoons Grand Marnier
Preheat oven to 350 degrees. Butter a 9 x 4 x 2-1/2 inch pan. Line with waxed paper and butter the paper. Sprinkle with flour and shake out excess.
Combine butter, molasses, honey, and brown sugar in electric mixer. Add eggs one at a time, then add sour cream, vanilla, and lemon zest. Sift together flour, baking soda, salt, and spices. Fold into mixture.
Spread batter into baking pan and cook 50 to 55 minutes or until golden brown and cooked through. Use a toothpick to check if center is done. Cool for 15 minutes before serving. Slice into 1/2-inch pieces and top with fruit salad and a pinch of powdered sugar.
