|2 tbsp||unsalted butter, at room temperature|
|6 tbsp||unsalted butter, at room temperature|
|2 tbsp||minced shallot|
|6 tbsp||dry white wine|
|3 tbsp||fresh ginger, peeled and grated|
|2 tbsp||fresh lime juice|
|1 tbsp||grated lime zest|
|salt and fresh ground pepper, to taste|
In a pan melt the 2 tablespoons butter. Add the shallot and cook until almost tender. Add the wine and cook until the liquid is almost completely absorbed and the mixture is syrupy. Leave to cool.
Whisk together the cooled shallot mixture with the ginger, lime juice and zest and the 6 tablespoons butter. Season with salt and pepper.
Use with scallops.
